At Public Grains, focaccia is where everything begins. The Focaccia Project is our ongoing commitment to building bread around Washington-grown wheat and ingredients sourced directly from the farms and producers that surround us.
Each loaf is slowly fermented, hand-stretched, and baked to highlight the character of regional grain, not just as a vehicle for toppings, but as the foundation of the meal. We approach focaccia as a staple: nourishing, deeply flavorful, and meant to bring people together.
