The Public Grains Focaccia Project

At Public Grains, focaccia is where everything begins. The Focaccia Project is our ongoing commitment to building bread around Washington-grown wheat and ingredients sourced directly from the farms and producers that surround us.

Each loaf is slowly fermented, hand-stretched, and baked to highlight the character of regional grain, not just as a vehicle for toppings, but as the foundation of the meal. We approach focaccia as a staple: nourishing, deeply flavorful, and meant to bring people together.

From sandwiches at the farmers market to catered gatherings and sandwich-forward celebrations, our focaccia is built with structure, lightness, and integrity. Crisp edges. Airy crumb. Real flavor from real grain.

By connecting craft baking with local agriculture, the Focaccia Project supports farmers, shortens the distance between field and table, and creates food that reflects where it was grown.

This is not just bread.
It is Washington wheat, properly treated.
